The secret is out!
This is our secret chilli crab recipe which our family has enjoyed for many years.
To get the inside word on where the best spots are for your crab pots, well, only in-house guests at Cairns Beaches Flashpackers can try to convince me to reveal those secrets! And even then, you may not succeed!
In the meantime, we hope you love this recipe as much as we do!
The Cottew Family Chilli Crab Recipe
Please note: as any good cook knows, amounts are approximate and variable.
2 x mud crabs
4 x cloves crushed garlic
1 tbsp grated ginger
Fresh chilli (optional)
2-3 tbsp of sweet chilli sauce
1 x handful fresh coriander
A good Dash of tomato ketchup
1 x dsp brown sugar
¼ cup water
In a deep wok, saute the garlic and ginger in oil.
Add the sweet chilli sauce, fresh coriander and fresh chilli
Add the tomato ketchup, brown sugar, salt and water.
Add the prepared fresh crabs and toss until they are coated with the sauce and cooked through.
Just before serving add one beaten egg to sauce. Stir. Garnish with fresh coriander and serve with rice or noodles.
