Crispy Chilli Fish Recipe
An evening fishing trip caught these 2 beautiful Red Emperors. Superb eating.
Now, how to turn them into a Crispy Chilli Fish Dish. A meal fit for kings 😊
You will need a sharp knife to take off the perfect filets. ( or ask a friendly neighbour for help)
Cut filets into serving size pieces, pat dry with paper towel then dip in flour, egg and bread crumps. ( We use Panko bread crumbs as they tend to keep a nice crispy crunch )
Set aside whilst you make the sauce

The Cottew Family Chilli Fish Recipe
Please note: as any good cook knows, amounts are approximate and variable.
4 X fish filets ( crumbed and ready to cook)
4 x cloves crushed garlic
1 tbsp grated ginger
Fresh chilli (optional)
2-3 tbsp of sweet chilli sauce
1 x handful fresh coriander
A good Dash of tomato ketchup
1 x dsp brown sugar
¼ cup water
In a fry pan, saute the garlic and ginger in oil.
Add the sweet chilli sauce, fresh coriander and fresh chilli
Add the tomato ketchup, brown sugar, salt and water.
Hold on a gentle simmer whilst pan frying the fish filets in separate pan and then serve the fish with the sauce drizzled over the top
Garnish with fresh coriander and serve with rice or noodles. Enjoy
